
Asian-style Pork Noodles with Chilli Sambal

No words for this one – you just have to make it! A proper midweek treat that’s on the table in under 15 minutes. Juicy pork, crunchy carrots, spring onions, and silky rice noodles all tossed together with sesame, soy, vinegar, and a big hit of Chilli Sambal. Toasting the sesame seeds is non-negotiable – it takes 2 minutes and makes the dish.

Ingredients
- 3 tbsp toasted sesame seeds
- 2 tbsp olive oil or sunflower oil
- 350g Italian sausages, skins removed + torn into chunky 2cm pieces
- 1 medium carrot, diced
- 160g rice noodles
- 2 garlic cloves, diced
- 2 spring onions, thinly sliced
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 2 tbsp Chilli Sambal
Method
- Cook noodles – Prepare rice noodles according to the packet instructions. Rinse under warm water and set aside.
- Toast sesame seeds – Heat a large frying pan over medium-high heat. Add sesame seeds and toast for 2–3 minutes until lightly golden. Transfer to a plate.
- Cook pork – In the same pan, heat the oil. Add sausage pieces and fry for 3 minutes until starting to colour. Add garlic and carrot, then fry for another 2–3 minutes.
- Bring it together – Turn off the heat. Add noodles, spring onions, soy sauce, rice vinegar, and toasted sesame seeds. Toss everything together.
- Finish + serve – Divide between plates and top generously with Chilli Sambal. Serve immediately.
