Ingredients 

  • 1 Aubergine, sliced into quarters
  • 1 tbsp Olive Oil
  • 3 tbsp Tahini Paste
  • 240ml Cold Water
  • 2 tbsp Chopped Peanuts
  • 1 tbsp Chilli Sambal
  • 1 Spring Onion, sliced
  • Squeeze of Lime Juice
  • Salt & Pepper

Method

 

  1. Preheat oven to 190°C. Add aubergine quarters to a baking tray and drizzle with olive oil, salt, and pepper.
  2. Roast for 30-35 minutes or until golden and tender.
  3. In a bowl, whisk together tahini and cold water until smooth and creamy. Season with salt and pepper to taste.
  4. Spread the tahini mixture evenly on a serving platter.
  5. Top with roasted aubergine, chopped peanuts, spring onion, lime juice, and a generous spoonful of Chilli Sambal.
  6. Serve immediately and enjoy!
