Broccoli Courgette Cheddar Soup + Chilli Sambal

Looking for a quick, comforting, and nutritious soup that’s bursting with flavour? This Broccoli Courgette Cheddar Soup hits the spot, especially with a dollop of Chilli Sambal for that extra kick. Make a batch to have for lunches throughout the week!

Serves: 4 | Prep Time: 5 mins | Cook Time: 15 mins | Total Time: 20 mins


Ingredients

  • 3 tbsp olive oil
  • 4 garlic cloves, roughly chopped
  • 1/2 leek, roughly chopped
  • 3 celery sticks, roughly sliced
  • 2 courgettes, sliced into 2cm pieces
  • 350g broccoli (use the whole broccoli, including the stem; chop into florets)
  • 30g grated cheddar cheese
  • Squeeze of lemon
  • Salt and pepper, to taste
  • Water (enough to cover the vegetables, leaving 2cm off from the top)

For Serving:
1 tbsp Chilli Sambal per serving

Method

Step 1: Cook the Veggies

  • Set a large saucepan to medium-high heat and add the olive oil.
  • Add the leeks, celery, and garlic. Simmer for about 4 minutes, reducing the heat slightly to avoid burning.

Step 2: Add Courgettes & Broccoli

  • Add the courgettes and broccoli pieces to the pan.
  • Cover with enough water, leaving about 2cm of space from the top.
  • Cover the pan with a lid and bring to the boil. Once boiling, reduce to a simmer and cook for about 5 minutes, or until the broccoli is just tender.

Step 3: Blend & Season

  • Carefully transfer the soup mixture to a blender.
  • Add the cheddar cheese, lemon juice, salt, and pepper. Blitz until smooth (30-40 seconds).
  • Taste and adjust seasoning if needed.

Step 4: Serve & Store

  • Serve hot with 1 tbsp Chilli Sambal stirred through or drizzled on top.Store in the fridge for up to 4 days.
