Crispy Chicken Burger with Smoked Cashew

This is a proper chicken burger. Juicy, crunchy, and packed with flavour — thanks to a clever pickle juice marinade and a generous helping of Saucy Smoked Cashew. The result is punchy, garlicky and honestly, a bit outrageous. Perfect for a solo treat or double up for dinner guests.

Ingredients


Quick pickled onions:

  • ½ red onion, thinly sliced (mandoline works best)
  • 100ml The Pickle House pickle juice
  • For the chicken:
  • 1 medium chicken breast
  • 300ml The Pickle House pickle juice
  • 2–3 tbsp flour (spelt or plain)
  • 100ml sunflower oil (roughly)

Burger fillings:

  • 2 Brussels sprouts, finely sliced
  • 2 baby gem lettuce leaves
  • A small handful of coriander or parsley
  • ½ avocado, mashed
  • 2 tbsp Smoked Cashew
  • Juice of ⅓ lime
  • 1 brioche burger bun

Method

  1. Marinate the chicken:
    Add the chicken breast to a bowl and cover with pickle juice. Leave in the fridge for 1–2 hours, or ideally overnight.
  2. Prep the chicken:
    Remove chicken from the fridge and let it come to room temp. Pat dry with paper towel. Place on a chopping board, lay a sheet of cling film on top and bash to an even 2cm thickness with a rolling pin. Season with salt and pepper, then dust lightly in flour, shaking off any excess.
  3. Fry the chicken:
    Heat sunflower oil in a large frying pan over medium to high heat. When hot, gently lower the chicken in and fry for 2.5 minutes, then flip and cook for another 2 minutes until golden and crisp. Transfer to kitchen towel to rest for 4 minutes.
  4. Pickle the onion:
    While the chicken rests, place the sliced onion in a small bowl with pickle juice. Squish and stir, then leave to sit for at least 10 minutes.
  5. Toast + build:
    Pour off most of the oil from the pan and lightly toast the burger bun on both sides. Spread mashed avocado on the base, then top with chicken, pickled onion, lettuce, shaved sprouts, a drizzle of pickle juice, fresh herbs, an extra spoon of Smoked Cashew, a pinch of salt and a final squeeze of lime. Add the top bun and eat immediately.
