Ingredients
For the Taco:
- 1 tortilla
- 120g minced chicken fillet, at room temperature (You can buy it ready-minced or mince it yourself in a blender)
- 100ml sunflower oil
- Salt + pepper, to taste
Toppings:
- 1 spring onion, thinly sliced
- Handful of coriander
- Squeeze of lime
- 1/3 avocado, sliced
- 1 tsp Chilli Sambal or Peanut Salsa
Method
Step 1: Prepare the Chicken
- Add the minced chicken to a bowl, season well with salt and pepper, and mix.
Step 2: Fry the Taco
- Heat a small frying pan over medium-high heat and add the sunflower oil. Let it heat up until shimmering.
- Place the tortilla on a chopping board and spread the seasoned chicken mince evenly over it using a fork.
- Carefully place the tortilla chicken-side down into the hot oil. It should sizzle gently; if it's too intense, lower the heat.
- Fry for about 1 minute and 20 seconds, then flip over and fry the other side for 30 seconds.
- Remove the taco and drain excess oil on a paper towel.
Step 3: Add the Toppings & Serve
- Transfer the taco to a plate and top with spring onion, coriander, avocado slices, and a good spoonful of Chilli Sambal.
- Finish with a squeeze of lime and a final pinch of salt.
- Fold and eat straight away!
