
Viral Cucumber Salad with Chilli Oil

This is our version of the cucumber salad that’s been popping off online, with our Chilli Oil (or Chilli Sambal) bringing the kick and depth. It’s crunchy, punchy, and ridiculously moreish. Amazing for a quick lunch, light dinner or something to balance out a heavier main.

Ingredients
Salad
- 1 whole cucumber, sliced thinly with a mandoline
- 1 small carrot, peeled into ribbons
- 120g good-quality tuna, broken up
Dressing
- 3 tbsp soya sauce
- 3 tbsp rice wine vinegar
- 2 tbsp sesame oil
- Juice of ½ small lime
- 1 tbsp Chilli Oil (or Chilli Sambal)
- 2 tbsp sesame seeds
Method
- Mix all the dressing ingredients together in a small bowl.
- Add the cucumber, carrot and tuna to a mixing bowl.
- Pour over the dressing and toss everything together until well coated.
- Taste, adjust seasoning if needed and serve immediately.
